I have tried so many different vegan brownie recipe's and this one is my favourite. It uses avocado and I was a little apprehensive about making brownies with avocado, but the result is just amazing!
They are super easy to make and don't take too much time either.
Avocado vegan brownie recipe:
Method:
Pre-heat the oven to 180 degrees celsius (lower this to 170 for fan assisted ovens).
Line a baking tray with baking paper (roughly an 8*8 inch tray) and rub a little coconut oil over the paper, just enough to line the tray.
You will need a large mixing bowl; in this bowl you will whisk the pureed avocado and coconut oil. Now this recipe works better if you blitz the avocado in the food processor to get it to the pureed stage, but if you don't have a food processor, you can mash up the avocado and the use an electric whisk to mix it into the coconut oil. You should whisk until the two ingredients combine and make a smooth paste.
Now whisk in the flour, cocoa powder, sugar baking soda and salt.
Slowly add the coconut milk and whisk until the mixture is smooth again.
Crush up the chocolate buttons and add to the mixture.
Spread the mixture evenly into the prepared baking tray and bake between 15-20 (dependant on your oven).
You can check your brownies to see if they are ready by inserting a toothpick in to the centre of the bake; if the pick comes out clean, the brownies are ready (yey), if still stick, they made need 5 more minutes.
Once cooked, allow to cool a little (but they do taste super yum straight out of the oven) and then cut up in to brownies pieces (or if you're making this just for you, just leave it as one giant brownie).
The brownies should stay fresh for about three days or so, if stored properly (yeah right, like they'll last that long)!
The result should be melted chocolate gooey insides with a crispy outside!
I also used the same recipe to make an Easter carrot patch brownie cake. I just topped the whole thing with chocolate spread and sprinkled finely crushed Oreos over the top. Then I added strawberries covered in white vegan chocolate and orange food colouring (these were the carrots) 🥕
