I’ve made a few different kinds of brownies since going vegan but these so far are my favourite.
I've put together a step by step photo guide, because if you are anything like me reading and reading through recipes can throw me off and I am constantly pausing videos so photo guides for me work best.
Hope you try these and enjoy them:
Ingredients needed:
1 ripe avocado 🥑
200g plain flour
150g sugar (coconut sugar works best)
100g chocolate powder
1/2 teaspoon of salt
vegan chocolate buttons/broken chocolate bar 🍫
4 tablespoons of coconut oil 🥥
3/4 canned coconut milk 🥛
2 teaspoons of caramel flavouring (or any other flavour you think would work).
I have made these without a processor but if mashing by hand, you will really have to make sure the avocado mix is smooth.
If you don't have a processor, you can use an electric whisk or really put in the elbow grease and whisk your arm off!
I used dairy free chocolate buttons and some of my Nomo salted caramel bar, broken up (only some of because I ate the rest).
Doctor Oetker's is vegan but not all flavourings are. Also not all Dr Oetker's baking supplies are vegan friendly so always check first. Also note that using caramel flavouring and coconut sugar will darken the carmel mixture. If you use a lighter sugar and lighter flavouring the colour may vary.
Try not to over mix as the brownie is so much nicer with the two flavours being slightly separated.
My old gas cooker took only around 20 minutes but my newer electric fan based oven takes a little longer between 25-30 minutes. Check after 20 minutes by inserting a toothpick and if it can be removed without any sticky mixture sticking to it- the brownie is ready to remove.
I use a tin with a removal bottom and this way the brownie can be released from the tin sooner. If you cut at it when it is still warm, the chocolate will still be gooey and melted. If you leave it to cool, it will stiffen up more and more. Both ways of eating are amazing - so try both!
If you dont eat them all, leave on a plate, covered with a towel for a day or in a tin for up to three days.
