I‘ve tried so many different vegan cake recipes and this is my go to fail safe recipe! Love these cakes (a little too much) 😍
Method:
🧁Preheat oven to 175 degrees C
🧁Line the muffin tin
🧁Whisk the aquafaba for 2 minutes-Then place to one side
🧁In another bowl mix the milk and vinegar-Then place this to one side and it will curdle slightly
🧁In ANOTHER bowl (sorry), combine the sugar and butter and whisk (preferably with an electric whisk) for 2 minutes
🧁Add the aquafaba and vanilla and whisk for another minute
🧁Slowly whisk in all dry ingredients
🧁Slowly add the milk mixture
🧁Whisk on low setting until the mixture is well combined
🧁Fill cake cases up to 2/3 full
🧁Pop in the oven for 20-25 minutes
I have a fan oven and mine are always done by 20. You can check with a tooth pick to see if the middles are set on the first go!
If you wanna make the swirly marbled cakes, you just adds dots of food colouring to the mixture once it’s in the cases and before it goes in to the oven and then swirl the colours with a toothpick! Then once they’re out of the oven spray that glitter!!
